South Indian Chicken Chettinad Recipe.

- For Roast and Grind:
- 1 1/2 tbsp Coriander Seeds

- 1 Whole Mace
- 4 Green cardamom
- 4 Cloves
- 1 Cinnamon Stick
- 1 Star Anise
- 4 Whole Red Chillies
- 1/2 cup Desiccated Coconut/Freshly Grated Coconut
- For Marination:
- 500 gms Chicken
- 3/4 tsp Turmeric Powder
- 1/2 tsp Salt
- 1 tsp Lemon Juice
- For Gravy:
- 2 tbsp Vegetable Oil
- 15-20 Curry Leaves
- 15-20 Shallots (Cut into halves)
- 2 Tomatoes (Chopped)
- 1 tbsp Ginger Garlic Paste
- as per taste Salt (As required)
- 3/4 cup Water
Steps to make to make Chettinad Chicken
- Heat a pan. Add all the ingredients mentioned under "Roast and Grind". Roast on low flame for 3 minutes.

- Add the desiccated coconut. You can also use freshly grated coconut. Roast till the coconut changes color.



- Allow it to cool. Transfer to a blender and blend to a coarse powder.


- Wash the chicken pieces. Drain and marinate with the ingredients mentioned under "Marination". Allow it to rest for 15 minutes or overnight.

- Heat a pan. Add oil. Add curry leaves.

- Add shallots and saute till the onions are translucent.



- Add the chopped tomatoes and cook till the tomatoes are soft and mushy.


- Add ginger garlic paste and saute till the raw smell leaves.


- Add the marinated chicken and cook on medium to high flame for 2 minutes.


- Now add the roasted and ground masala powder and salt. Saute for a minute or two.


- Cover and cook on low flame for 5 minutes. Add water and cover and cook on a medium flame for 15 minutes.


- South Indian Chettinad Chicken is ready.



- Serve South Indian Chettinad Chicken hot with steamed rice, roti, parotta, etc.
